Sometimes a girl just needs a dessert. I have given up chocolate as one square leads to many, and same with ice cream. Of course, baked goods are off the menu too. I am tempted by the world of primal/paleo baked goods, but wonder if they will disappoint (I used to be a great baker!) or if they will be so delicious that I overeat them. So fruit is my usual dessert, but sometimes a piece of plain fruit falls short. Like last night. So I get creative. This little wonder is a mix of sweet, salt, creamy, crunch and spice. Perfect for fall.
Spicy Sauted Apple
(SWEET) 1 apple sliced into wedges (leave the peel on if desired, but core it. Wedges should be 1/4″- 1/3″ thick).
(SALT) 1/2 Tablespoon salted butter (coconut oil will work for paleo, just add a dash of salt)
(SPICE) 1/2 Teaspoon Pumpkin pie spice
(CRUNCH/SALT) 1/8 of a cup of chopped pecans, dry roasted and salted
(CREAMY) Can of full fat coconut milk that sat in the fridge
Melt the butter in a pan and toss in the apple and spice. Saute for a minute or two then add in the pecans. Saute until the doneness of the apples suits your fancy (I like mine a bit firm). Put that whole mess in a bowl. Then the magic….. that coconut milk will have some lovely clotted creaminess. Scoop out about a tablespoon full onto your apples. 🙂 It will all melt into creamy sweet goodness.
So there you have it, easy peasy dessert full of good nutrition for your body that tastes amazing and satisfies everything we love about dessert and remains true to the ingredients.
