Progressing nicely…lol, it is only day 2, but good energy amd no sugar cravings. Took the dog for a nice walk.

Coffee with coconut milk

Lunch was roast beef and 2 eggs (protein to make up for the carby breakfast)

Dinner will be a chicken salad with chicken, celery, mayo, apple, almonds and curry powder. YUM!

For today’s recipe or new and novel Whole 30 food, I made a pumpkin smoothie. Don’t get me wrong- I love eggs. But eggs day in/day out get old. So I need breakfast alternatives. A smoothie is always fun and kind of sweet and light giving me a break from savory without resorting to the sugar bowl. My recipe made 2 generous size smoothies. Lucky boyfriend got a nice healthy breakfast in the fridge!

Pumpkin Smoothie:
1/2 can full fat coconut milk (glance at the can and make sure you aren’t buying something with sugar or other nasties in it)
2/3 can pumpkin (not pie filling, just pumpkin)
2 frozen bananas in chunks
2 Tablespoons almond butter (check to make sure no sugar or weird oils)
2 big teaspoons pumpkin pie spice

Blend the coconut milk, pumpkin, almond butter and spice, then add in the bananas and blend. This was a super thick smoothie. It was divine, like pumpkin ice cream. Vanilla bean scraped in would have been decadent.
